Baja Venus Clams are a native clam species grown off bottom in the Alto Golfo Biosphere Reserve, a pristine federally protected area where there is little human activity. The water quality of the growing areas are constantly monitored. The farm works with state and federal authorities to ensure that water quality laws and regulations are followed. Baja Venus Clams are harvested by hand without the use of dredges, therefore minimizing the environmental impact.
Venus Clams are available year-round and packed in 10 pound mesh bags, averaging 15-18 count (slightly larger than a Manila Clam). The meats are tender, sweet and briny. The shells are beautiful and elongated, making for an appealing dish.
