Rohan Duckling
A D’Artagnan exclusive, the Rohan™ duck was inspired by the wide variety of duck breeds available in France. Working with our farmers, we developed a proprietary hybrid of several heritage breeds including Mallard and Pekin ducks. Today the New York State farm raises the Rohan™ duck exclusively for us, and to our exacting standards.
Moulard Duck
The large Moulard duck is a cross between the Pekin and Muscovy breeds and is the backbone of gastronomy in Southwest France. It is the duck of choice for producing foie gras, that luxurious fattened liver, as well as magret, duck leg confit. Raised for D’Artagnan at a New York State farm in large barns with plenty of space and natural light. The ducks are never administered antibiotics or hormones, are fed a vegetarian diet of corn and soy, and have access to clean water.
Pekin-Long Island Duck
The Pekin duck is often called the Long Island duck because of the early proliferation of Pekin breeders in that area of New York. This large duck is a favorite for roasting whole, especially in the Peking style. Its meat is lighter with a milder flavor than either Moulard or Muscovy duck. We work with two family farms, one in Indiana, the other in Long Island, NY (it’s one of the few remaining duck farms there). Both farms follow strict protocols for humane animal husbandry and raise the ducks in spacious barns with plenty of space, natural light and air. They eat a diet of corn and soybean meal, with clean drinking water always available. No hormones or antibiotics are ever administered.
Muscovy Duck
Muscovy duck, also known as Barbary (or Barbarie) duck, originates from the warm region of South America. It is a thin-skinned duck that is prized for its deep red, lean meat and mildly gamey flavor. It has up to 40% less fat than its Pekin counterpart, and thus, renders much less fat in cooking. Muscovy ducks also have a higher meat-to-bone ratio and 50% more breast meat than Pekin ducks of the same weight. Raised on a small farm in California’s sunny San Joaquin Valley, our Muscovy ducks never receive any growth hormones, steroids or antibiotics. They are fed a diet of corn, soy, wheat and alfalfa and are left to grow in open barns for up to ninety days.
