Pacifico Striped Bass are open-ocean raised "True" Striped Bass, not the commonly farmed hybrid freshwater Striped Bass. Pacifico Bass has a white meat with a semi-firm texture and a higher fat content than wild Striped Bass. This is an incredibly versatile fish allowing for many preparation methods. Cooked, it has a flaky meat with a skin that crisps beautifully.
