Hawaiian Kanpachi, Seriola rivoliana, is a member of the Amberjack family and highly prized in Japan. The fish gets its name for the bands centered over the eyes when it is young. They look similar to the Japanese symbol for the number 8 "pachi" and "kan" means "center." Hawaiian Kanpachi is farm raised by Blue Ocean, a fully integrated mariculture facility. The fish are raised in open ocean net pens in the lee of Mauna Kea and Hualalai, Hawaii.
Hawaiian Kanpachi has a light pink flesh with a distinctly fresh, sweet flavor and firm texture.
