From her farmstead creamery near Altura, Minnesota, Cheesemaker Katie Bonow takes her cheesemaking education learned in Italy and Vermont and applies a gifted hand to cheeses crafted in the southeast Driftless region of the state. Capra Nera Creamery utilizes milk from a herd of approximately thirty goats. Not a drop goes to waste in Katie’s carefully crafted wheels including Contadina, a shining example of the raw milk she collects and the terroir of the region.
