Orchard Points are float-raised in surface cages in the open waters near the mouth of the Chester River, on Maryland's Eastern Shore.  They are finished in the deeper, merroir-rich waters of the Eastern Bay.  The unique mineral content of the watershed and hard bottom imparts a soft brine flavor, with a sweet melon and buttery umami finish.
