These oysters are raised in a rack and bag system then transferred to cages and trays when they are large enough. Toph's farm is at a high-flow area of the mouth at the West Branch of the Westport River. The farm has a shallow area where the trays are used and a deep area where the bottom cages are. Spindrift oysters have an intense mineral brine with a sweet lingering finish.
