Mittaki means ‘perfect’ or ‘complete’ in Japanese. They are grown in Barkley sound off the west coast of Vancouver Island.  These oysters are very similar to a kusshi, except they are not tumbled.  The shell is rough.  The meats are small, plump and dense with a sweet and briny taste.
