They come from Discovery Bay on the northern end of Washington’s Olympic Kitsap peninsula. These oysters are raised in trays until they reach a perfect half-shell size. Farmed in cold, clear waters open to the Straits of Juan de Fuca, these fast growing oysters have lovely fluted shells which yield firm meats with a crisp and mildly salty flavor leaving a sweet aftertaste.
