Fangst

Denmark

A century ago, there were numerous small canning companies along the coastlines of the Nordic waters. Over the last decades, almost all have disappeared, and proud traditions have been lost. Yet some of the finest fish and shellfish in the world still swim here. With respect for nature and gastronomic craftsmanship, FANGST from Denmark has set sail to re-discover and explore the abundance of seafood in the Nordic waters and to revive and renew the local culture for canned seafood.

Faroe Islands Salmon Flash Grilled in Cold Pressed Rapeseed Oil

Moist and rich in salmon flavor, this fjord-grown fillet comes nestled in a buttery pool of rich rapeseed oil with a satisfying hint of char. The clear and still waters of Faroe Islands protected fjords make its salmon farms amongst the cleanest and healthiest in the world. The result is a fatty, rich fish that bursts with flavor and is every bit as delicious as it looks. We love it on a tin board with scallions and softened neufchatel or on a sandwich with pickled red onion and stone-ground mustard.

Faroe Islands Salmon with Sea Buckthorn & Lemon Verbena

Faroe Islands Salmon with sea buckthorn and lemon verbena. Its remote location in the North Atlantic, clear waters, cool steady temperatures, strong currents and protected fjords make the Faroe Islands the perfect place for salmon. FANGST has added a sprinkle of verbena herb and crushed sea buckthorn – a berry that grows by the coasts of the North, and is known as ‘the Nordic lemon’.

Blåmusling No. 2
Limfjord Blue Mussels Smoked in Cold Pressed Rapeseed Oil

Meaty, bouncy, smoky and bold, these mussels are simple, elegant, and dependably delicious. Long before this tin’s development, Danish mussels were famous the world over. Grown in cold inlets called fjords, most are shipped fresh overseas, but Fangst decided to keep them local and marry them with, golden, buttery smooth rapeseed oil. We love them on salt & vinegar chips or tossing them with orzo, lemon juice, and your favorite garden herbs for a simple, decadent pasta salad.

Limfjord Cockles in Cold Pressed Rapeseed Oil

Clams in oil of any kind are a rare sight to behold, and along with their meaty, bouncy, buttery taste, a chief reason these cockles from Fangst are a must try. The cold waters of Denmark’s fjords (a Scandinavian name for estuary) make for cockles that are clean, mild, meaty, and firm. The addition of locally sourced, organic, cold-pressed rapeseed oil gives the clams extra body and a buttery bite, making them perfect for dunking with crusty bread and dowsing with lemon juice or tossing with orecchiette, capers, and chili flake.

Regnbue Ørred
Danish Freshwater Trout Smoked with Juniper & Lemon Thyme

Fresh, clean, flaky, and moist, this smoked trout from Fangst is a floral trip into the flavorful history of Nordic cuisine. Expertly raised in the small, slowness-centered trout farms of Denmark, these fillets are gingerly smoked before they are pack in buttery rapeseed oil with piney juniper and bright lemon thyme. Try them on brown bread with grass-fed butter or flaked atop some mustard-whipped deviled eggs.
